Sesame Sourdough Loaf


I wanted to try something new with my #sourdough today. It's fun to stick different ingredients into the basic classic recipe to see how the whole bread experience transforms! I was inspired by Blondie and Rye (seriously, check out her insta. It's so beautiful!), who had made a 20% spelt with browned butter, toasted sesame oil, honey, and brown sugar. I didn't want mine too sweet, and I also wanted to see what adding just one flavour would do, so my formula was as follows:



350 g water

50 g sourdough starter

400 g bread flour

100 g spelt

1 tsp salt

1 tbsp sesame oil

1 tbsp olive/avocado oil

1 tbsp toasted sesame seeds





The result was gorgeous! I put the loaf in my smaller Dutch oven, giving the loaf more support on the sides as it rose, because there wasn't any room between the dough and the sides of the D.O.. I don't know why I didn't try that before! The crumb was so perfect and fluffy. My only self criticism is that I do think that the sesame oil flavour would benefit from some sweetness to balance it out, so I can see why Blondie and Rye did it that way. Maybe next time!


I ate it with some blueberry honey that dad got me from Bison General for #Christmas and effectively spoiled my appetite for supper. Oh well, I guess!
